Pesto Genovese Pasta Danish
This is a crispy danish pastry topped with homemade pesto genovese pasta. There’s also potato ecrase between the pastry and the pasta, and some Pecorino Romano added to give it all a rich aroma. Chef Murota worked at an Italian restaurant for a time, and the pesto alla genovese and pasta in this pastry creation were developed exclusively for this danish.
Like spaghetti napolitan or yakisoba-pan, which were invented in Japan, this danish is uniquely Japanese, but with an added element of gourmet sophistication.
